Black Bean & Corn Salad
This light, fresh salad/salsa goes wonderfully with any type of southwest flavor or for eating with tortilla chips. Easy to make and easy to adjust to your personal taste.
How to make it:
Add everything to a bowl, mix well, and ENJOY!
1 can black beans, drained & rinsed
1 can (15 oz) corn, drained
½ red bell pepper, diced
1-2 tomatoes, diced (alt. 1 can Rotel)
½ cup red onion, chopped
1 T fresh cilantro, chopped
2 T lime juice
2 T olive oil
Salt & Pepper to taste
Optional: avocado, or any other yummy veg!
