You can't have Greek Gyros without Tzatziki! This light and refreshing sauce will bring your Greek Chicken to the next level.
How to make it:
Grate cucumber on large holes of grater (no need to peel). Squeeze out as much moisture as possible from grated cucumber and discard liquid.
Stack 2-3 paper towels on top of each other on a flat surface. Spread out shredded cucumber on paper towels and sprinkle over salt. Allow to rest for 5-10 minutes while you prepare the yoghurt.
Add yoghurt, olive oil, lemon juice, garlic, and optional herbs to a bowl. Mix well.
Take an additional paper towel and press over the top of cucumbers to remove additional moisture.
Add shredded cucumber to bowl with yoghurt and mix well. Store in refrigerator until ready to use.
1 English Cucumber
½-1 tsp sea salt
1 ½ cups plain Greek yoghurt
2 T extra virgin olive oil
1 T lemon juice
1 medium clove garlic, pressed or minced
Optional: 2 T chopped fresh mint and/or dill
