You can't have Greek Gyros without Tzatziki! This light and refreshing sauce will bring your Greek Chicken to the next level.

How to make it:

  • Grate cucumber on large holes of grater (no need to peel). Squeeze out as much moisture as possible from grated cucumber and discard liquid.

  • Stack 2-3 paper towels on top of each other on a flat surface. Spread out shredded cucumber on paper towels and sprinkle over salt. Allow to rest for 5-10 minutes while you prepare the yoghurt.

  • Add yoghurt, olive oil, lemon juice, garlic, and optional herbs to a bowl. Mix well.

  • Take an additional paper towel and press over the top of cucumbers to remove additional moisture.

  • Add shredded cucumber to bowl with yoghurt and mix well. Store in refrigerator until ready to use.

  • 1 ½ cups plain Greek yoghurt
