Island Coleslaw with Vinaigrette

Island Coleslaw with Vinaigrette

How to make it:

Combine coleslaw mix (cabbage & carrots), pineapple, green onions, cilantro, and juice of one lime (if desired), in a large bowl and mix until evenly combined.

In a separate bowl, combine all ingredients for the vinaigrette and whisk until fully combined.

Pour vinaigrette over vegetables and toss until coated. Cover and chill in refrigerator for at least half an hour before serving.

Before serving, toss again and garnish with black sesame seeds. Enjoy!


2 1/2 cups shredded green cabbage

1 cup shredded red cabbage

1/2 cup shredded carrots

OR 4 cups coleslaw mix

1 cup fresh pineapple, diced

2 green onions, sliced

1/4 cup cilantro, chopped

Juice of 1 lime (optional)


1 1/2 T fresh ginger, grated

1 T olive oil

3 T rice wine vinegar

1 T soy sauce

1 T honey

2 tsp sesame oil

Juice of 1 lime

Salt to taste

Black sesame seeds for garnish
